Melt the chocolate in a bowl over a pot of simmering water.
Add the cream, ground cardamom, cocoa powder, vanilla extract, and salt to the melted chocolate. Stir until well combined.
Let the mixture cool in the refrigerator for at least an hour.
Use a spoon to scoop out small amounts of the mixture and roll them into balls.
Coat the balls in cocoa powder or crushed nuts.
Place the truffles in the refrigerator to set for at least 30 minutes.
