Couscous with fried chicken is not healthy that much and what I mean by that is you can’t classify it as junky food but here is the thing couscous is a light dish. When you eat it for lunch or dinner it will go away fast and you feel hungry quickly because your body will digest it quickly.

So if you are following a diet you have mainly two options, you can stay away from it or you can make it from while to while.

How to make couscous from scratch?

The right method to make traditional couscous from scratch is a little complicated and it has a lot of steps we will cover soon but I will explain the easy way quickly.

You’ll need to start with a good quality couscous. There are many brands of couscous available, so choose one that you trust. You’ll also need to simmer the couscous in broth or water until it is cooked through. Once it is cooked, you can add your favorite vegetables, meats, or spices to the couscous to give it flavor.

How to make couscous with fried chicken?

Ingredients

  • Extra virgin olive oil
  • Tomato paste
  • Garlic (minced)
  • Ras el Hanout
  • Ground cinnamon (divided)
  • ground ginger
  • chicken thighs
  • Salt and black pepper
  • carrot
  • celery ribs
  • Red onion
  • 1 packet couscous

Directions

  • Let’s make the right steps to make our traditional Maghreb couscous with fried chicken. First, we will start with chicken sauce. Bring a glass cup not too big ( about 1/4 liter), add 1/3 cup olive oil, 4 tablespoons tomato paste, 4 minced cloves garlic, 2 teaspoons of Ras el Hanout ( it’s basically a compilation of cardamom, cinnamon, turmeric, cloves, ginger, cayenne pepper, nutmeg all in one pot). Stir them well.
  • Second, in a casserole, add two and a half pounds of chicken thighs and spread them well. Add salt and black pepper to each side. Then, pour the sauce over the chicken and roll the chicken around so that it will be well-coated. Make sure to keep some sauce for veggies.
  • Next, let’s work on some veggies, we will add 3 carrots, 1 red onion, and 2 celery ribs. Make sure to cut them into slices then put them all in a bowl. Add salt, black pepper, olive oil, and the rest of the sauce to the bowl. Stir them well.
  • Now, add the veggies and the chicken all to an oven tray. Try to arrange them well.
  • After that, enter the tray into the oven at 400 degrees for about 45 minutes.
  • Now, we will start preparing couscous and we will use Morrocan couscous. There are many couscous brands out there so make sure to get a good one.
  • In a saucepan, coat the bottom with olive oil. Add one cup of couscous. Stir the couscous around it should change its color to a nice medium golden brown.
  • Add 1 cup of boiled water to the pan. Turn the heat off and add salt then cover it for 10 minutes.
  • Now, after 10 minutes couscous should have absorbed all water. Add 1 teaspoon cinnamon and a little bit of parsley to it. Fluff the couscous up.
  • Finally, when the chicken is cooked add the couscous to it and let it rest for about 10 minutes to absorb the sauce well. And with this our recipe couscous with fried chicken is ready. Cheers!!!
