This creamy veggie pasta is the perfect comfort food for a chilly winter night. It’s packed with flavorful roasted veggies, and the creamy sauce is absolutely delicious. Plus, it’s super easy to make!

1 Ok, without any further ado, let’s start with our dish. First, roast your veggies in a 400-degree oven. I like to use a mix of broccoli, cauliflower, and carrots. You can really use any veggies you like, though. Roast the veggies for about 20 minutes, or until they’re tender and lightly browned.

2 Second, While the veggies are roasting, cook your pasta in a large pot of boiling water. I like to use penne or rotini for this dish.

3 Once the pasta is cooked, drain it and add it to a large bowl. Add the roasted veggies and a jar of your favorite pasta sauce. Usually, I like to use a creamy Alfredo sauce but will make our sauce at home.

4 Ok, To make our pasta sauce or you can call it cream bring a pan and add a piece of butter to it and let it melt. After that, add 1 minced onion, 1 minced tomato, 2 minced garlic cloves, salt, 1 tablespoon tomato paste, 1 cup of pasta water that is cooked in, 2 cups cream, some spinach, 1 teaspoon chili flakes, 1 teaspoon basil, 1 teaspoon garlic herb, 1 teaspoon black pepper, 1 cup parmesan cheese. Mix all these ingredients on medium heat.

5 Here, we are already in the final step, mix the pasta with sauce and let it rest for about 10 minutes for the pasta to absorb the sauce well. Cheers!!!
