Ingredients
    For the dough
  • 2 cups Flour
  • 1/4 cup Olive oil or melted ghee
  • 1/4 cup Water
  • 1/2 teaspoon salt
  • For the filling
  • 2 tablespoons Olive oil
  • 3 Big potatoes (boiled)
  • 1 cup Frozen green peas
  • 2 tablespoons Coriander leaves (chopped)
  • 1 Green chili (chopped)
  • 1/4 cup Cashews, crushed (optional)
  • 3 Garlic cloves (minced)
  • 1 tablespoon Ginger paste
  • 1 teaspoon Coriander seeds, crushed
  • 1/2 teaspoon Garam masala
  • 1 teaspoon Chili powder
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Turmeric (powder)
  • 1 tablespoon Lemon juice
  • Salt to taste
  • 1/4 cup Water
Instructions
  1. First, we will begin with dough, bring a bowl and add 2 cups of flour (250g), 1/2 tsp of salt, 1/4 cup of olive oil, or melted ghee. Rub the flour with the oil until the mixture starts to resemble crumbs. Add 1/4 cup of water (60 ml) gradually with kneading until you get a dough.

  2. Second, cover the dough for about 30 minutes. while that, boil three big potatoes in water for 10 minutes then peel them and cut them into small pieces.

  3. Third, bring a frying pan and on medium heat, add olive oil, crushed coriander seeds, garam masala, chili powder, cumin seeds, and turmeric. Cook with stirring for 1 minute.

  4. Next, add garlic cloves, ginger paste, and chopped green chili. Cook for 1 minute.

  5. After that, add chopped onion and sauté for 4 minutes. When you’re done, add cut potatoes to the pan, and frozen green peas. Cook for 5 minutes.

  6. Next, add lemon juice, salt to taste, and 1/4 cup of water (60 ml). Cook for 5 minutes and stir frequently. Add 1/4 cup of crushed cashews, and chopped coriander leaves. Stir well then put the mixture aside to cool.

  7. Now, let’s back to the Sambosa dough. Divide the dough into 6 equal parts and make every part like a ball. Now, roll out each ball into an oval and make it as thin as possible. Extra note here, while you’re working with one ball, keep the other balls covered.

  8. After that, when you made the oval cut it in half. Now, form each half like a cone. Fill the cone with the mixture that we made before. brush the cone edges with water, and close the Sambosa. Repeat with all the parts.

  9. Next, drop the veggie Sambosas into hot oil, you can put 4 – 5 each time. Fry them for about 5 minutes until golden brown.

  10. Finally, drain the Sambosas on paper towels and you can add any sauce you want to add extra flavor. Cheers!!!
