  • 1 cup corn kernels (fresh or canned)
  • 1 cup all-purpose flour
  • 1 cup grated cheddar cheese
  • 1/4 cup chopped green onions
  • 2 tablespoons butter
  • 2 tablespoons chopped parsley
  • Salt and pepper, to taste
  • Vegetable oil, for frying
  1. In a large bowl, mix together the corn kernels, flour, grated cheddar cheese, green onions, butter, parsley, salt and pepper.

  2. Using your hands, shape the mixture into 1 1/2 inch balls.

  3. Heat the oil in a deep saucepan over medium heat.

  4. Once the oil is hot, gently place the cheese balls into the oil and fry until golden brown, about 3-4 minutes.

  5. Remove the cheese balls from the oil and place on a paper towel-lined plate to drain any excess oil.

  • If the mixture is too wet, add more flour until it can be shaped into balls.
  • If the mixture is too dry, add more cheese or a little bit of milk.
  • For an extra crunch, roll the cheese balls in breadcrumbs before frying.
